It is buckwheat flour!
Ok, so I'm mainly writing this review to respond to some of the negative reviews regarding this flour due to it's color. Buckwheat is processed in two ways, with the hull and without the hull. Hence, giving a light flour when milled without the hull, and a darker, brown flour when processed with the hull. I've used both types in my GF baking for varied applications. Some people prefer one over the other. I use buckwheat as one of the flours in my GF all purpose mix and for this purpose, I prefer the lighter flour so that the buckwheat taste is muted. Now, if I'm making pancakes, the darker flour is best, in my opinion. I often will not purchase an item because of the reviews so I know that reviews are important. BTW, those dark flecks in the flour are the buckwheat hull. Happy baking to you all.

Works well (with flaxmeal)
A bit large size so I may start using instead of my almond flour to finish, initially used for my pizza crust, works well

Great Buckwheat flour
I love all of Anthony’s Organic products. I have a few supplements and love this buckwheat flour, but my only complaint is packaging. It’s resealable but both times i’ve bought this, it doesn’t close & I end up putting it in a different container. Plus the flour gets up there and when I open it flour is in the air lol.

Lovely white seeded buckwheat flour
This is really wonderful white seeded buckwheat flour that I have been using to make an incredible classic Italian buckwheat cake that’s traditionally from the Alps region of Italy. The variety of buckwheat flour I received in late 2024 is from the white seeded variety of buckwheat, but in the past, a few years ago, they used a dark seeded buckwheat species for this flour. I wonder why they don’t mention the buckwheat seed type in their description? Usually companies advertise if the white seeded buckwheat is used because it is considered more desirable due to its more neutral flavor.
