Great knife for dressing deer.
Bought this for meat trimming and it does not disappoint. Retains blade well and easy to resharpen when needed. Comfortable to use for extended periods. Little on the expensive side but well worth the cost for a quality knife.

My go to knife.
I love this knife. It’s the one I use the most. I work in a meat department so sharp knives are essential. All the other guys use the Fibrox handles or Dexter knives. This breaking knife and the rosewood boning knife look amazing, much better than plastic.I keep them extremely clean because they’re wood and that’s iffy when it comes to the health department, but I’ve never been told I can’t use them. The handles do get some maintenance every so often with mineral oil to keep them from getting dried out and splitting.They’re wicked sharp out of the package, but it doesn’t last with stainless which is why a steel comes in handy to realign the edge. It’s a good knife, definitely recommend it if you want something with a little more character than plastic.

Top Quality Knives
Update.The added image shows the 8 inch and 6 inch knives I purchased last year alongside the same knives I purchased in 1987 or so.In my first career 25 years ago, I was a grocery store meatcutter for many years. I've been using one of these knives for over 30 years now and it still holds a fine edge with only touch-ups on a 3-way stone every now and then. The brand name was just "Forschner" back then.Everyone in the family loves this knife and the 6-inch sister knife of the same brand and age because they are both ALWAYS sharp.I got tired of having to find these knives when I wanted to use them, so I bought new ones for everyone else and now keep my two knives hidden for when I need them.This is definitely top quality, commercial grade equipment.
