The olives are harvested while still semi-green and cold-pressed, which guarantees oil with a low acidity and a light and fruity flavor.Canino Organic Extra Virgin Olive Oil by Il Molino is yellowish-green in color with a nose of aromatic herbs, thistle and dried fruit. The initially sweet flavor takes on the slightly bitter taste of thistle and has a white pepper aftertaste. The Il Molino farm, which has belonged to the Sciuga family for generations, is built around the 18th century farmhouse that represents the heart of the property. Located on the hills of the charming upper Lazio region, between Montefiascone and the Bolsena Lake, it spans approximately 250 hectares and is run in compliance with organic farming standards.
